Polenta

This northern Italian staple is made from ground cornmeal. This is a quick cook polenta and very easy to make at home. Polenta can be prepared many ways, but one our favorite ways is baked. Just cook in simmering water until water is completely absorbed, about 5 minutes. Cool then add parmesan or sharp provolone cheese, bake for 10 minutes and serve as is or with your favorite pasta sauce.
