Giardiniera is an Italian pickled vegetable mix including cauliflower, celery, onions, zucchini and carrots. These pickeld vegetables are usually mixed in red wine or white wine vinegar, giving it the name “sotto aceti” which means “under vinegar” in Italian. In the United States, and more specifically Chicago, it is used as a sandwich, hot-dog and even pizza toppings. There is a Hot Giardiniera, which contains the addition of Cut Sport Peppers, whereas the Mild Giardiniera which does not have the cut sport peppers. The american version may also contain other pickled veggies.
