#56. In Italy, “00” flour, or doppio zero flour, is an ingredient needed for anything from pizza dough, pasta and bread. The “00” designation means that it is finely ground wheat. Usually from red wheat, it has a gluten content which range from 5% to 12%. Typically, “00” flour for bread are designated as “panifiabile” in Italian. Italian “00” flour that is “panifiable” make for excellent bread like ciabatta and focaccia. Higher gluten “00” flour is used to make pasta while low-gluten wheat is used for cakes and pastries.
